Tarta de Almendras Casera 🤤 ¡Riquísima!



Uno de los productos estrella de nuestra confitería es la tarta de almendras casera. Años de experiencia nos ha permitido deleitar con nuestro dulce a locales y turistas, y hoy queremos compartirla con todos vosotros para que también podáis hacerla en casa, cuando estéis lejos de Gijón y no podáis venir a probarla a nuestra tienda de repostería gourmet. Sin duda esta tarta es una de las tartaletas más ricas de Asturias.

¿Dónde comprar nuestra famosa tarta?

Si eres turista y estás de paso por Gijón, puedes ir al emblemático casco antiguo, nosotros estamos detrás de la estatua de Pelayo, uno de los puntos obligados de paso. En la Confitería Collada vendemos desde porciones de tarta de almendra, hasta tartas enteras para llevar. Ingredientes para hacer la Tarta de Almendras Casera



Aunque nos guardamos algún ingrediente secreto que os contaremos un poco más adelante, os dejamos los ingredientes necesarios para hacer una rica Tarta de Almendras Casera.

  • doscientos cincuenta grs Almendra molida
  • doscientos grs Azúcar
  • seis Huevos
  • dos Cucharadas de coñac
  • 1 Plancha hojaldre
  • 1/2 Vaso de agua (para almíbar)
  • 1/2 Vaso de azúcar (para almíbar)
  • dos Cucharadas de coñac (para almíbar)

Elaboración de la Receta de Tarta de Almendras

Los pasos que nosotros llevamos en nuestro obrador son 100% elaboración casera, si tenéis cualquier duda o necesitáis cualquier aclaración podéis dejarla abajo en comentarios.

  1. Primeramente preparamos el almíbar poniendo en un cazo el agua, azúcar y coñac y lo dejamos hervir a lo largo de 5 minutos, reservamos.
  2. Precalentamos el horno a ciento ochenta grados y mientras, batimos manualmente los huevos con el azúcar, incorporamos la almendra molida, integramos bien y finalmente agregamos las 2 cucharadas de coñac, mezclamos y reservamos.
  3. Extendemos en un molde la plancha de hojaldre de forma cuidadosa, adaptándola bien en el fondo y a los lados, lo que nos sobra lo cortamos pasando el rodillo de amasar sobre el borde. Este paso asimismo podemos hacerlo de otra manera y es enhornando anteriormente diez minutos el hojaldre con algo de peso (unos garbanzos por servirnos de un ejemplo) a fin de que no suba exactamente el mismo y más tarde ponemos la masa de la tarta. Nosotros una vez puesto el hojaldre sin enhornar ponemos la masa y metemos al horno.
  4. Es una tarta que debe quedar jugosa con lo que vamos a ir observando y cuando pinchemos con una brocheta por servirnos de un ejemplo y salga limpia, sacamos del horno.
  5. Una vez haya descansado unos minutos, desmoldamos la tarta de manera cuidadosa, le hacemos en la superficie agujeros pinchando con una brocheta y vamos echando poquito a poco el almíbar que tenemos reservado, este paso es a gusto de cada uno de ellos, cuanto pero almíbar pero jugosa va a quedar por la parte interior.

Si dejais que enfríe antes de comerla a temperatura ambiente, el sabor de todos los ingredientes reposan y mejoran aún más su sabor. Si la metes en la nevera justo al acabar puede hacer que el hojaldre se moje y no esté tan crujiente.
